Blueberry Pistachio Granola

Blueberry pistachio granola is the perfect mix of sweet and salty. Freeze dried blueberries add the sweet, while crunchy pistachios add the salty. Whip up this easy homemade granola in under 40 minutes.

Do you have a go-to breakfast? One you could probably eat on repeat and {almost} never get sick of? That’s me with granola, berries and yogurt. When I have absolutely no clue what to eat, this is the recipe I turn to.

Probably because it hits all of the right flavor and texture profiles for me. There’s cool and creamy from the yogurt. Then juicy and sweet from fresh berries of my choosing. Finally, salty-sweet crunch from granola.

No matter what, the granola has to be on point. That crunchy texture just brings everything together. Because without it, you might as well have chosen a plain bowl of oatmeal.

Granola is the star of this morning breakfast show. It can be flashy, like this mango coconut granola, or it can sit in the background but comes out of no-where with a great one-liner, like this peanut butter granola. Or it can be this blueberry pistachio granola that’s the third anchor of the show. It’s a little bit sweet, a little bit salty, doesn’t draw too much attention, but will leave you wanting more every time.

Some might argue here that the star of the show in this granola are the pistachios, but I have to disagree. These freeze dried blueberries are an unexpected hit of flavor right to the ole taste buds.

When they’re baked they become this sweet pod of blueberry flavor. The crunch doesn’t remain like you get from eating freeze dried fruit right out of the bag. Instead they’re slightly chewy, but enhance their sweetness.

This is where I think the pistachios come into play. They’re the ones hiding in the wings ready to make their grand entrance. They’re like the guest star on Ellen who comes busting out with some amazing dance you never knew they had.

It’s no wonder the oh-so-common bag of pistachios you see is called “Wonderful Pistachios”. These babies are full of healthy fats, protein and antioxidants. Maybe you’ll just start to join in that Ellen dance after eating a handful.

The show you can’t stop watching

Ingredients
Ingredients:
  • 2 ½ cups old fashioned oats
  • 2 Tbsp chia seeds
  • ¼ cup uncooked quinoa
  • ½ cup shelled pistachios
  • 1 cup freeze dried blueberries
  • ¼ cup honey
  • 2 Tbsp maple syrup
  • 2 Tbsp packed Truvia brown sugar blend
  • ¼ cup melted coconut oil
  • 2 tsp vanilla
  • ½ tsp. cardamom
  • ¼ tsp salt
Directions
Directions:
  1. Preheat oven to 300°F. Grease a large baking sheet with cooking spray.
  2. In a large bowl, stir together the oats, chia seeds, quinoa, pistachios and blueberries.
  3. In a small bowl, whisk together the honey, maple syrup, brown sugar, oil, vanilla, cardamom and salt.
  4. Pour the wet ingredients over the dry ingredients and stir until coated.*
  5. Spread the granola out on the prepared baking sheet in an even layer.
  6. Bake for 15 minutes, rotating the pan, and continue to bake for an additional 10 minutes.**
  7. Place the baking sheet on a wire rack to cool.
  8. Break into pieces and store in an airtight container.
Recipe Notes

*Note: the mixture may seem dry at first, but keep stirring until everything is coated.

**Note: if you have a darker pan, I would suggest baking for 7-8 additional minutes.
