I don’t know about you and your SO, but Burken and I are a bit sporadic when it comes to celebrating the love holiday.
Some years we celebrate with gifts and dinner out, some years we do no gifts and just a nice dinner in at the house.
This year we’re going the no gifts route and a nice dinner at home. And since food is my love language, I love making all of his favorites {and maybe a few of mine as well}.
Chocolate covered strawberries are a great classic for Valentine’s Day, but they take a little effort to make. Plus I like to eat my dessert for breakfast, and thought it might be a good idea to make it a little healthier.
This chocolate covered strawberry smoothie hit all the marks for me. Healthy, chocolate-y, tastes like dessert, but I can enjoy it for breakfast.
Chocolate covered strawberry smoothie: the base
All smoothies need some sort of liquid to get things going in the blender. This chocolate covered strawberry smoothie is no exception.
I wanted a thick and creamy smoothie to enjoy for breakfast today, so I opted for my two favorite dairy free drinks.
Silk vanilla and chocolate cashew milk are the perfect pairing for this luscious, dessert-like smoothie.
I love pairing the two together, because if I had used only chocolate for the entire smoothie, it would have been too rich. Without it though, the vanilla cashew milk wouldn’t have offered the extra chocolate flavor I want in a chocolate covered strawberry smoothie.
The mixture between the two balances each out, yet keeps the smoothie extra creamy.

When it comes to making a super thick smoothie, I love to use frozen fruit {and veggies}.
Yes, you heard me right, frozen veggies.
The obvious frozen fruit portion is strawberries. You can definitely use fresh in this smoothie, but I prefer frozen to give some extra thickness. Most frozen fruit is made without added sugar, but just double check this before making your smoothie. We still want to make sure this is a healthy chocolate covered strawberry smoothie.
Now, for the veg. I absolutely love using frozen cauliflower in my smoothies. I know, this sounds a bit crazy, but I promise you that you won’t be able to taste it at all!
It’s similar to that spinach in a smoothie situation. Except cauliflower doesn’t turn your smoothie a gross brownish/green color.

No, I’m not adding melted chocolate to this smoothie. I’m not even adding cocoa powder to this smoothie.
Nope, I’m using my all-time fave chocolate protein powder. It makes this smoothie so thick and delicious, I’m starting to drool just thinking about it.
This protein powder is like chocolate flavor on steroids, yet it has so many incredible ingredients in it and helps keep me full all morning long.

Chocolate covered strawberry smoothie has all the flavor of a chocolate covered strawberry, just in a healthy thick and creamy smoothie.
- 1 1/2 cups Silk Chocolate Cashew Milk
- 2 cups Silk Unsweetened Vanilla Almond Milk
- 1 1/2 cups frozen strawberries
- 1 1/2 cups frozen cauliflower
- 2 scoops chocolate protein powder

In the jar of a blender, add all ingredients* and blend on medium speed until thick and smooth.

If desired, add 2-3 Tbsp. of peanut butter.
*Note: if you’d like to create the same split look, blend all ingredients, except the protein powder. Pour half of the strawberry mix among two cups. Add the chocolate protein powder to the remaining smoothie mix and blend. Pour on top of the strawberry smoothie.
