Lemon raspberry fruit dip is a healthy-ish, four ingredient recipe. It’s cool and creamy and bursting with lemon and raspberry flavor. Pair it with apple slices, banana coins, pretzels or whole wheat crackers.
Hello from Myrtle Beach, South Carolina! As this post goes to “print”, Burken and I are enjoying the start of our vacation on the beach. This is our first time to Myrtle Beach, and I can’t wait to share all of our adventures with you!
We’ll be getting back just before Memorial Day weekend, which means a whole lot of boating with my family. Memorial Day weekend for “river rats”, as we’re so lovingly called, is the kickoff to summer.
Boating always means snacks. So, I wanted to make sure I had a super easy snack that I could throw together after we get back from vacation. Because let’s be honest, sometimes you need a vacation from your vacation. And I can’t be bothered with extensive treat making.
This lemon raspberry fruit dip fits perfectly into that easy snack recipe. With just four ingredients and a food processor, you can whip up this recipe in no time!
4-ingredient lemon raspberry fruit dip
Like all good fruit dips we’re starting with light cream cheese. Soften it to make sure it blends up nice and smooth. Then we add in Lemon Oreo Thins. If you’ve never had these, they’re definitely worth a try, even outside of this dip. We finish off with fresh raspberries and some rosé.
Don’t forget that May is the month of rosé. So of course I had to include some rosé in this recipe. If you’re not interested in using wine in this dip, then you can use this elderflower and rose lemonade. It’s light and refreshing just like rosé.
5-minutes to lemon raspberry fruit dip
Your food processor is going to make light work of this five minute recipe. Just add your cookies {which can be super addicting, so try not to eat them all before you process}. Then cream cheese, raspberries and rosé.
Then just blend! I decided to keep mine just a little bit chunkier with cookie pieces, but feel free to keep blending if you want a smoother dip.
All that’s left is to chill your dip. While it’s super good straight out of the food processor, it’s even better when it’s cold. So pop it in the fridge for a couple hours, or in the freezer for about 45 minutes if you’re short on time.
Disappearing dip
I could seriously eat this lightly sweet lemony dip with just a spoon, but thought it best to maybe serve with some other accouterments.
Apple slices, banana coins {fancy word for banana slices}, pretzels and whole wheat crackers are great dipping options. I love pretzels and whole wheat crackers because they offer that sweet and salty combos.
I hope you have a fantastic Memorial Day weekend! And if you’re looking for more recipes that are perfect Memorial Day, then check out the below.
