My sweet tooth seems to run rampant after dinner. I always need just a little something sweet to feel like the night is complete. Many times, though, I don’t want to be making up some large batch of cookies or brownies. I also don’t want to buy the break and bake cookies. I know those come in handy many-a-night, but they always seem over-processed to me.

Instead, I pull out a couple of ingredients from my pantry and fridge and whip up a quick mug cake. You may have seen these before, but it’s for good reason. They’re so simple to make, and take just five minutes of your time, including cook time, to make. Why wouldn’t you whip up a homemade cookie or brownie on a weeknight when literally the hardest part is waiting for it to cool down enough to eat?

Let’s start first with the classic: a chocolate chip cookie. Now, I’ll be honest, this turns out to be a bit more cakey that cookie. But if it’s 8 pm on a Wednesday night and you need something to satisfy your sweet tooth, I don’t think you’re going to be all that picky.

They all get mixed together right in the mug, because who has time to dirty more dishes? Then pop it in the microwave for 1-2 minutes. This will definitely depend on your microwave power and the type of mug you use. I love these ones from Target. So just watch and make sure it’s cooked all the way through.

Your cookie will be super hot. So don’t burn your mouth like I have in the past because I have been too eager to just dive right in to a warm soft baked cookie.

Indulgent Chocolate Brownie Mug Cake

If you’re looking for something a bit less healthy, then this indulgent chocolate brownie mug cake is for you. It seriously tastes just like a brownie, without all of the hassle. After it cools, you even get the nice little crust on top like you would with a traditional brownie.

Same thing applies here: mix all ingredients in one mug and pop in the microwave. Just know that this one has to be eaten fairly quickly. After cooling slightly, of course. I left mine out for about an hour or so. I know, you’re probably wondering why that would even happen. But it’s because I had already taste tested about five other desserts that day and was kind of on sugar overload.

This brownie was so good though that I didn’t want it to go to waste. Well, it sort of did in the end, because after I left it out for a couple hours, it turned into a rock solid brownie log. Not exactly what I’m looking for when it comes to brownies.

Healthy Chocolate Chip Cookie Ingredients:
  • 2 Tbsp. white whole wheat flour
  • 1/2 scoop vanilla protein powder
  • 1/4 tsp. baking powder
  • pinch of salt
  • 2 Tbsp. whole milk plain Greek yogurt
  • 2 Tbsp. milk of choice
  • 1 Tbsp. natural creamy peanut butter
  • 2 Tbsp. pure maple syrup
  • 1/2 tsp. vanilla
  • 2 Tbsp. dark chocolate chips
Decadent Chocolate Brownie Ingredients
  • 1/4 cup flour
  • 1/4 cup granulated sugar
  • 1/2 tsp. baking powder
  • 2 Tbsp. cocoa powder
  • 2 Tbsp. butter, melted
  • 3 Tbsp. milk of choice
  • 1/2 tsp. vanilla
  • 3 Tbsp. semi-sweet chocolate chips
Directions
  1. For the chocolate chip cookie: in a large mug, stir together the flour, protein powder, baking powder and salt. 

  2. Make a well in the center and stir in the yogurt, milk, peanut butter, maple syrup and vanilla. Stir until combined. Fold in the chocolate chips. 

  3. Microwave for 1-2 minutes, depending on the power of your microwave, until cooked through. 

  4. For the brownie: in a large mug, stir together the flour, sugar baking powder and cocoa powder. 

  5. Make a well in the center and stir in the melted butter, milk and vanilla. Stir until combined. Fold in the chocolate chips. 

  6. Microwave for 1-2 minutes, depending on the power of your microwave, until cooked through. Top with ice cream if desired.
