This no-cook vegan chocolate pudding is luscious and creamy, without any eggs or dairy. It’s the perfect dessert for when you want to feel like you’re indulging, but it’s secretly healthy.
Sometimes my cravings for chocolate are strong. Such was the case when I decided to make this vegan chocolate pudding. However, I still wanted to make it a healthy chocolate pudding, because that’s just what I do.
A friend was coming over for dinner, so I thought it would be the perfect time to gauge interest in this healthy chocolate pudding. Neither one of us is vegan, but I wanted to make this pudding as easy as possible. Which meant not needing to cook it over the stove-top or have much prep and hands on time.
I set to work quickly and pulled out a couple of different ingredients I had on hand. Those included: dates, cocoa powder, aquafaba {read more about that here}, dark chocolate chips {obviously use dairy free to make it vegan}, avocado and almond milk. This grocery list may sound a bit odd, but trust me when I say that all ingredients combined make for a to-die-for dessert.
So Simple Vegan Chocolate Pudding
Now that you know the secret ingredients, it’s time to learn that the vegan chocolate pudding only requires one appliance to make: a food processor. If you don’t yet have a food processor, I would highly suggest picking one up. They can do so much, like make pita bread, copycat Larabars, healthy chocolate brownies and more.
Just toss all of the ingredients in your food processor and run on high speed until the dates are completely broken down and smooth. If your dates are on the harder side {read: not totally fresh}, soak them in super hot water for about 10-15 minutes. This should help soften them so you don’t end up with slightly chunky pudding. {Which is what happened to me the first time around.}
Chill Out
Like all good puddings, they require some good chilling time. So if you’re making dinner for a friend or Valentine {hey, it’s coming up}, then make sure to make the dessert first. This way it will have plenty of time to chill out before being devoured.
My friend couldn’t believe how rich and delicious this pudding was. Nor could she believe it was made with all of the above ingredients instead of eggs and heavy cream.

- 1/2 large avocado
- 1 cup pitted dates, roughly chopped*
- 1/2 cup aquafaba {liquid from canned chickpeas}
- 1/4 cup cocoa powder
- 1 tsp. vanilla
- 1/2 cup dairy free dark chocolate chips, melted
- 1/4 tsp. salt
- 1 1/2 cups unsweetened vanilla almond milk

Add all ingredients to the bowl of a food processor.

Blend on low speed, increasing to high, to combine all ingredients until smooth. If necessary, scrape the sides during blending to combine.

Pour into individual glass containers and refrigerate for at least an hour.
*If your dates are hard, soak them in hot water for 10-15 minutes to soften.
