Another month in the books, and man was it a great one! I hope you had a fantastic Memorial Day, celebrating with friends and family. Towards the end of this month, Burken and I took a trip to Myrtle Beach, SC, and then spent the remainder of Memorial Day weekend with my family.

So let’s get moving on this piece of cake journey.

Piece of Cake: Nourish

Some of you may have seen that I released a new meal plan earlier this month. It’s full of super fresh produce and recipes that are perfect for the summer months. Like plenty of burgers, grilled veggies, salads and smoothies.

This summer bacon salad was one of my favorites. I could seriously go for a large bowl of this salad right now!

Piece of Cake: Travel

If you’re not on Instagram and didn’t see my stories over this last week, you missed a lot about our vacation to Myrtle Beach, South Carolina. Above are just a few of the photos from our trip.

We walked the beach almost every morning. We stayed at the Anderson Ocean Club that was right on the beach. It was amazing to just leave our hotel and be just steps away from sand and sun. What we loved most about our hotel was the kitchenette. We were able to pick up a few groceries to have on hand for breakfast and easy lunches.

I’ll be honest, we did a lot more drinking than eating on this vacation, so there weren’t too many opportunities for food photos to share with all of you. But we did hit up a local ice cream joint {because I obviously love dessert}. It was called Kirk’s Ice Cream, and it was amazing! I got banana cream pie and strawberry shortcake. They were a match made in heaven! And boy do they load you up! Definitely worth a stop if you head to Myrtle Beach.

We also made a quick pit stop in Charleston, SC. I’ve been to Charleston one other time in high school, and I’m so glad we went back. It’s only a two hour drive my Myrtle Beach, so it was a perfect pit stop.

It’s so gorgeous walking around with huge trees, cobblestone streets, open air markets and houses turned restaurants. There were so many places I wish we would have been able to eat at, they all looked so good! We tried to eat as much seafood as possible while we were down there, so we stopped at one restaurant called The Darling Oyster Bar.

This place was so neat! They had an oyster shucking bar that you could sit next to and watch them shuck oysters. I couldn’t believe how big they were! I ended up getting homemade clam chowder {which was phenomenal} and a nice green salad {the one thing Myrtle Beach was lacking}.

If you have more time in Charleston, you should definitely walk up and down King Street at night to check out some of their bars and restaurants. It was so beautiful at night with lots of live outdoor music. A must if you’re there.

Piece of Cake: Lookin’ Good

It’s officially swim suit season! Right before going on vacation I bought a new suit from Target {probably my favorite place to pick on up}. How cute is this top? I bought it in a large, which is my typical suit size from Target. I paired it with these bottoms for a fun mix and match suit. They ran a little small, so I would suggest going up a size.
   

If you’re looking for a cute, but slightly more conservative suit, this one has quickly made it’s way to my shopping cart. I have a longer torso, so I plan on picking this one up in a large.

Piece of Cake: One last slice

Work it out: if you’re going on vacation this summer, then don’t forget about my 7 tips for working out while on vacation. It’s possible! I worked out every day on vacation. So I know you can do it!

Summer reading: what is a good beach vacation if you don’t have a book or two to read? I finished Everything We Left Behind by Kerry Lonsdale. It was the second book in the series about a man who lost his memory and built a whole new life. But then he comes back from this memory loss and tries to rebuild the life he knew and the life he has no memory of. The first book was also amazing and worth a read since they tie in to each other.

I’m now in the middle of When We Were Worthy by Marybeth Mayhew Wahlen which has been a fantastic read! It’s about a small southern town that’s dealing with a major tragedy. It follows four main characters and their ties to the accident that happened and how they’re dealing with it. Definitely one to pick up before your next vacation…you’ll fly through it!

What you’ve loved: as usual, this months favorite posts still hold strong with the 6 Best HIIT Workouts and the Peach Upside Down Cake. But the third most loved this month? This mango coconut granola!

It’s so perfect for summer breakfasts with fruit and yogurt. You should definitely check this one out if you haven’t already!

While I’m sad to see May end, I’m looking forward to the start of summer, more travels, more boating and more dessert recipes!
